I make a pretty good Quiche Lorraine. So tonight I tried my hand at a veggie quiche with broccoli, onions, and two kinds of cheese. I learned that broccoli emits quite a bit of water when it cooks, so the quiche needs extra time to bake out all the water. That made the crust get really brittle. The Wife also thought I chopped the broccoli up too fine and that there wasn't enough cheese. She didn't say anything but I could tell she didn't like the grenish tint the broccoli gave the custard. So next time -- less milk for the veggie quiche and bigger chunks of the veggies.
